Benefits of Linen Storage for Fresh-Milled Sourdough

  1. Breathability – Linen allows just enough airflow, preventing excess moisture buildup that causes mold, while keeping the crust from becoming soggy.
  2. Maintains Crust & Crumb Balance – The bread keeps its crisp, rustic crust while the inside stays soft and chewy instead of drying out too quickly.
  3. Natural Preservation – Linen is a natural fiber with antibacterial properties that helps protect bread without chemicals or plastics.
  4. Reduces Condensation – Unlike plastic, linen won’t trap steam, which is especially important for sourdough made with freshly milled flour that has a higher nutrient and oil content.
  5. Eco-Friendly & Reusable – A sustainable choice compared to plastic bags or paper wraps.
  6. Flavor Protection – The breathable fabric allows sourdough’s natural fermentation aromas and flavors to develop without being “sealed in” with off odors.
  7. Slows Staling – Fresh-milled sourdough already resists staling longer than commercial bread, and linen supports this by keeping the right balance of air and moisture.

Pro Tip: For longer storage, keep the bread in linen at room temperature for 1–2 days, then slice and freeze what you won’t eat soon. This way, you enjoy both freshness and convenience.

  • Ingredients:
Freshly milled organic wheat, sea salt, water

    Allergens: Wheat

    Loaf Weight: ~730g

Keep it fresh: Store the loaf in a bread box, paper bag, or loosely wrapped in a clean kitchen towel at room temperature. This keeps the crust crisp while preventing the inside from drying out.

For longer storage: Slice the loaf and freeze it in an airtight bag. Take out slices as needed and toast or warm them to enjoy fresh flavor and texture.

Avoid: Storing in plastic at room temperature, which traps moisture and encourages mold.

Extra tip: If the crust softens too much after storage, a few minutes in a preheated oven (350°F / 175°C) can bring back its crispness.
